Sate Ayam Bumbu Ambal

Bahan Sate :

* 300 gram daging ayam, dipotong kotak 1½ cm
* Tusuk sate

Bumbu Halus Sate:

* 5 siung bawang putih, digoreng sampai layu
* 2 siung bawang putih
* 5 butir bawang merah
* ½ sdt ketumbar
* 2 butir kemiri
* 1 cm jahe
* 1 sdt garam
* ¼ sdt gula merah

Bahan Saus:

* 100 gram tempe, digoreng matang
* 3 buah cabai merah
* 1 buah cabai rawit
* 5 siung bawang putih
* 1 sdt terasi
* 2 ½ sdt gula merah
* 2 sdt garam
* 100 gram kacang tanah goreng
* 2 lembar daun salam
* 1 cm lengkuas, dimemarkan
* 2 sendok makan minyak goreng
* 450 ml air
* 2 sdm kecap manis
* 10 gram asam jawa + 100 ml air

Cara Membuat:

1. Lumuri daging ayam dengan bumbu halus sate, diamkan 1 jam
2. Tusukkan di tusuk sate, bakar di bara api sampai matang
3. Saus: haluskan tempe, cabai merah, cabai rawit, bawah putih, terasi, gula merah, garam dan kacang tanah.
4. Tumis dalam minyak panas bersama daun salam dan lengkuas hingga harum.
5. Tuang air, kecap manis, dan air asam, aduk sampai meletup-letup.
6. Sajikan panas dengan sate.
